Blueberry Coconut Ice Pops

Our families just can’t wait for the opening of Solo: A Star Wars Story on March 25. So much so that we’ve already whipped up a treat inspired by the film to get your family excited!

We kicked off our celebration with these Blueberry Coconut Ice Pops inspired by a snowy planet that the characters visit in the film. We recommend having your kiddo help add some extra galactic flair by stamping their favorite heroes and heroines’ names and fun phrases onto the craft sticks. Strap yourself in—this is one dessert they’ll be asking for again, and again this summer.

Blueberry Coconut Ice Pops

PREP: 30 Min
SERVES: 4

Ingredients

  • 3 Cups unsweetened vanilla almond milk
  • 2 Tbsp honey
  • 1 ripe banana
  • Blue gel food coloring
  • 1/2 Cup fresh blueberries
  • 1/4 Cup slivered almonds
  • 2 Tbsp dried, unsweetened coconut flakes
  • Stamp
  • Nontoxic ink
  • Large craft sticks
  • Blender
  • 4 (10 Oz.) SOLO® Clear Cups
  • Tape
  • Food processor

Directions

    1. Use the ink and stamps to add character names and fun phrases to the craft sticks. (Make sure they’re on the lower part that won’t touch the ice pops.) Let dry.
    2. ICE POPS: In a blender, combine almond milk, honey, and ripe banana.
    3. Divide the liquid evenly into 2 containers. To one of the liquids, add a few drops of food coloring at a time, until the right shade of blue is achieved.
    4. Pour a small amount of the blue liquid into the bottom of each cup, then add some blueberries.
    5. Add a craft stick into the cups. Then, add 2 pieces of tape to the top of each cup to hold the sticks in place until frozen. Next, freeze the layer for 1 hour.
    6. Gently pour in the white layer and freeze for 1 hour.
    7. Alternate every hour with both colors and some blueberries to achieve 4 layers total.

  1. SHELL: In a food processor, lightly pulse slivered almonds and dried coconut together until blended into small pieces.
  2. Pour the mixture onto a plate to roll the ice pops on.
  3. Fill a large bowl with warm water.
  4. Dip the cups in the warm water to loosen and remove the ice pops from the cups.
  5. Roll the ice pops in the coconut/almond mixture.
  6. Return to freezer or enjoy immediately.
